Spaghetti squash is a winter squash variety with a unique, spaghetti-like texture. Chop it in half, scoop out the seeds, and roast at 425 for ~30 min, until tender, then use a fork to scrape out the spaghetti-like strands. Substitute for spaghetti in recipes–pairs well with parmesan, tomato sauce, or pesto!
